This is a new lot in our ongoing exploration of the Pink Bourbon variety. Each season, it is remarkable to see how this project continues to shift and grow, and we are pleased to see it expanding into Tolima. In the cup we find candied pomelo, berries, and fig.

Diana Alviz is a new producer in our ongoing exploration of Pink Bourbon. This is one of the first lots we have sourced from Tolima, and it marks an exciting expansion of our work with this variety. Pink Bourbon has reshaped the coffee landscape of southern Huila and, more broadly, the specialty market—raising the quality ceiling for the region and demonstrating how access to higher-potential varieties can meaningfully impact the industry.
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
The cost of getting a coffee from cherry to beverage varies enormously depending on its place of origin and the location of its consumption. The inclusion of price transparency is a starting point to inform broader conversation around the true costs of production and the sustainability of specialty coffee as a whole.
